How to use Wet Stone of 400/1000/3000/8000?
#400 grit side: quickly Remove the dull edge. Due to the abrasive nature of this type of stone, it should not be used for general sharpening unless these knives are very dull.
#1000 grit side: for honing. If your knives have lost their edge and need a good sharpen, then this is the grit you should start with.
#3000 grit side: for re-profile cutting edge of knife, refine the dull edge of blade and damaged gap of blade quickly.
#8000 grit side: for fine grinding, remove the burr and straighten the cutting edge of knives, enhance the edge to be sharp and polished.
HOW TO SHARPEN YOUR KNIVES?
Soak it in water for 10 minutes, put it in the bamboo base with rubber holder on a flat surface
Clip the guide on knife. Use the 400 grit side for rough grinding in 10~30 degree angle, push the knife with alittle force, and then gently retracted. This process takes about 15 minutes
Then use the 1000 grit side for finegrinding. This process takes about 10 minutes
Use 3000 grit side for fine grinding in 10~30 degree angle gently for 15 minutes
Use 8000 grit side for mirror polishing for 10 minutes
Use flattening Stone to keep your water stones flat
Keep some water on the stone to stay cool
After honing, clean the knife with wet cloth or water, then dry it
Use soft brush to clean the stone, then put it in a ventilated place to dry
